Basic Roast Chicken

  • 1 large chicken (about 4 pounds)
  • Olive oil
  • Salt
  • Pepper

Preheat oven to 400 degrees. Wash and dry chicken; removing any parts packaged inside the bird. Place bird in roasting pan and rub with olive oil, season with salt and pepper. Bake 1 hour or till the meat thermometer reads 155 degrees when inserted in the breast. (Be sure not to hit a bone, as you will get a false reading.) Remove from the oven and let sit 10 minutes before slicing.
