Chicken Tortilla Soup

  • 4 cups chicken broth
  • 2 cups frozen corn (or 1 can of corn)
  • 1 can black beans
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • 1 pound of cooked chopped chicken
  • ½ a teaspoon of cayenne pepper
  • Juice from 1 lime

Put all ingredients in a large saucepan. Simmer on medium heat for about 15-20 minutes or until chicken is thoroughly heated. Serve with fresh avocado, tortilla strips and cheddar cheese.
