French Toast
  • 4 slices whole-wheat bread
  • 2 eggs
  • ⅓ cup fat-free milk
  • ½ tsp. vanilla (optional)
  • ⅛ tsp. salt (optional)
  • 1 tbsp. vegetable oil

Beat together eggs, milk, vanilla, and salt in a shallow bowl. Heat oil in a skillet over medium heat. Dunk each slice of bread in egg mixture. Place in pan and cook until golden, about 2 minutes per side. Transfer to serving plate and sprinkle with powdered sugar and cinnamon, if desired. Optional: top with fresh fruit such as sliced strawberries.
