Roasted Sweet Potatoes and Onions

  • 2 and ½ pounds sweet potatoes (4-5 med sized) washed and dried
  • 2 medium red onions quartered
  • 1-2 tablespoon Olive oil
  • Salt
  • Pepper

Preheat oven to 400 degrees. Cut sweet potatoes into chunks, about 2 inches x 2 inches. Place sweet potatoes and onions in a baking dish. Rub with olive oil and season with salt and pepper.
