Spanish Brown Rice

  • 1 cup of brown rice
  • 1 teaspoon of olive oil or canola oil
  • ¼ white onion
  • salt and pepper to your taste
  • ½ tablespoon of cumin
  • ½ tablespoon of garlic
  • ½ can of original RO*TEL tomatoes
  • 2 cups of water
  • ½ can chicken broth low in sodium

In a large frying pan brown the onion. Add the other ingredients, simmer and cover for 50 minutes.
